In 2021, we reunited with James Beard-nominated Chef Jose De Brito to open Café Frank. Featuring everyday food from a classic French kitchen, Café Frank offers De Brito’s grab-and-go sandwiches, salads, pot pies, and pastries. At 4 pm, Apertif Hour includes De Brito’s small bites served a la carte with champagne, wine, or a cocktail. And at night, the dinner menu features dishes like beef carpaccio with oyster tartar and caper mayonnaise; house-made fettuccini with shrimp Bolognese and lobster tail; and Steak Diane with mushroom & bourbon sauce and scalloped potatoes.

In 2020, Stony Point Development Group asked us to create a new bar in the Dairy Market.

In 2019, the owners of the Violet Crown Cinema asked us to create a new restaurant for their state of the art theater. After deciding on a Japanese concept, we designed and built the dining room and kitchen, hired and trained the new staff, before handing the daily management over to the owners. The owner's closed Kama in early 2020 due to the impact of COVID-19.


Brasserie Saison

We began 2017 by opening Brasserie Saison, a Franco Belgian restaurant and brewery that was a two-year partnership with Champion Brewing Company. We sold our interest in the restaurant in 2019. It is now owned and managed by Champion Brewing Company.

A struggling little soup shop was on its second owner when we bought it in 2005. It is now a Charlottesville institution.


The Pie Chest - Fresh Seasonal Pies. Made From Scratch

The Pie Chest

In 2015, we opened The Pie Chest as a way to feature the extraordinary baking talent of The Whiskey Jar's baker, Rachel Pennington. In 2018, Ten Course Hospitality purchased a building on E. High St. in Charlottesville to provide The Pie Chest a bigger, better baking kitchen and second retail location. The Pie Chest is now wholly owned by Rachel Pennington.

In 2019 we were chosen to execute a new vision of the Café at Monticello. Led by legendary chef Alice Waters of Chez Panisse , the Ten Course Hospitality team operated the new Farm Table at Monticello with it's strong focus on local, sustainable ingredients and historically relevant recipes.

In 2018 we began a collaboration with The Colonnade Club, to streamline operations, improve their member and guest experience, and market the club to the next generation.


Modern Virginia Cuisine

Commonwealth Skybar

After 6 years, Commonwealth's momentum had slowed and we were asked to take over management. A more focuses menu, improved bar program and refined service led to a successful sale of the business.

In less than a year, we took Draft Taproom from break-even to a business so attractive it was acquired by a professional investment group.

The Whiskey Jar

30 days after being handed the key, The Whiskey Jar had undergone a complete renovation and was open for business.


The Alley Light

In 60 days, we turned an apartment into a restaurant that was nominated for a James Beard Award for Best New Restaurant.


The Bebedero

The original location in The Glass Building was open for business in 30 days. A year later we moved to the Downtown Mall, renovated the old Brookville space and were open in 15 days.


Brasserie Saison

60 days from a shell to a bustling restaurant.


The Pie Chest

40 days is what it took to gut an old thrift shop on E. High Street and turn it into a new baking kitchen and 2nd location of the popular pie shop.


Kama

60 days from concept to doors open.
